This is a fast and tasty dish using Real Organic Red Thai Curry Sauce based on fragrant spices and coconut and fresh chilli and galangal.
Begin by warming the sauce gently in a pan. Meanwhile peel and thinly slice a piece of fresh ginger and slice a red pepper. Stir fry peppers and ginger quickly in a little oil in a hot wok.
Slice a Pak Choi lengthways into quarters or eighths and add to wok, continuing to stir fry for a minute or two.
Add the warmed Real Organic Red Thai sauce then some soft noodles and heat through for a further minute.
Serve sprinkled with chopped fresh coriander. Serves 3 to 4
